Thanksgiving is right around the corner, and I am already so excited for the turkey and the stuffing and yes, that tried and true tradition, our old friend the pumpkin pie. I always say that pumpkin is at its peak when it's included in baked goods, so this year, I wanted to mix it up a bit and combine two of my favorite seasonal flavors: Pumpkin and Gingerbread!

These pumpkin bars are so tasty, classic pumpkin flavor but with a kick of ginger. They're also super customizable to fit your nutritional needs, and provide for a yummy treat that's on the healthier side! Let's get started, shall we?
What would Thanksgiving be without tradition? I remember my mom would use Libby's Pumpkin in all her holiday recipes, and I've always planned to do the same. I like that Libby's pumpkin is all-natural and contains no preservatives. That way I know exactly what I'm putting in my body, and with food sensitivities that's really important to me. Pumpkin is rich in vitamin A, a good source of the antioxidant beta-carotene and a great source of fiber as well! 

I also picked up some Nestlé Toll House Pumpkin Spice Morsels to make pumpkin spice chip cookies, and Nestlé Carnation Evaporated Milk, 15oz to use in some other fun holiday recipes this season. You can pick up these an many other holiday staples in your baking aisle at Walmart.

To make these scrumptious Pumpkin Gingerbread bars, you will need...

For the Crust:
  • 1 cup graham cracker crumbs
  • 2/3 cup of dry oats
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp baking powder
  • 2 tbsp coconut oil or butter, melted
  • 1/3 cup unsweetened applesauce
  • 1/4 cup honey or molasses (I used honey, for richer flavor use molasses)
  • a pinch of salt

For the Filling:
  • Libby's 100% Pure Pumpkin, 15oz.
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 1/3 cup dark brown sugar
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice (or pumpkin pie spice)
  • a pinch of salt

Baking Instructions:
  1. Preheat your oven to 350ºF and line an 8x8 baking pan with a sheet of aluminum foil. Spray with cooking spray.
  2. In a large bowl, combine graham cracker crumbs, oats, baking powder, and salt. Stir until fully mixed. Add in coconut oil, applesauce, and honey. Mix well. Allow to chill in fridge.
  3. In another bowl, beat the egg. Add pumpkin, vanilla, sugar, and spices. Stir until fully combined. 
  4. Using a fork or your fingers, press the crust mixture into the lined pan. Make sure it is evenly and tightly packed. 
  5. Pour the pumpkin filling over the crust, making sure it is spread evenly. 
  6. Bake for 35 minutes or until pumpkin has set. 
  7. Remove from oven and let cool before cutting into bars.
