Pineapple Upside Down Cocktail

I'd thought that pineapple upside down cake all but disappeared in the new millennium, but I'm bringin' good ole upside down cake back with this drink recipe! Perfect for that slice-of-cake craving, without having to bake the whole cake!

This drink is quick, easy, super pretty, and housemate approved. I made them last night, and my roomies loved them!

To make these pineapple beauties, you will need:

-A shaker full of ice
-1 cup Pineapple juice
-2 shots Vanilla (or cake) flavored vodka
-Grenadine syrup
-A martini glass
-Cherries, fresh pineapple, and whipped cream for garnish (all optional)

First, pour the pineapple juice (I diluted mine just a bit with water) and vodka into the shaker. Give it a good shake. Pour into martini glasses. Then, slowly pour a cap full of grenadine into the drink to create a layered effect.

Stir before drinking, and enjoy yourself a glass of Pineapple Upside Down cake!
