Eat This: Zoodle Aglio e Olio with Clams

There's little I love more than an easy dish that looks and tastes fancier than it actually is. A cool name also helps too - Aglio e Olio - which literally translates to "garlic and oil" - is one of the most simple yet delicious meals in my weeknight arsenal. Traditionally, Aglio e Olio is a spaghetti dish with sauteed garlic and tossed in olive oil, but to add a healthier kick and a bit of protein, I decided to kick it up a notch with some zucchini and chopped clams.
To make this rendition of Aglio e Olio, you will need:
  • one or two zucchini (depending on size)
  • a veggie spiralizer
  • 1 clove garlic (I use pre-chopped)
  • a splash of olive oil
  • 1/4 cup frozen clams, chopped
  • salt and pepper to taste

To start, spiralize your zucchini. Then, place your frying pan on medium heat and coat the pan with a light pour of olive oil. Once that warms up, add your garlic and clams to the pan. Sautee until clams are fully cooked and garlic is fragrant. Toss in your zucchini noodles and allow to cook until tender.
If you're feeling creative or particularly fancy, you can add a variety of extra flavors. A few of my favorite are nutritional yeast - which adds a parmesan kind of taste, truffle sauce - I'll throw this in at the garlic step, or Himalayan pink salt. Red pepper flakes are a good addition too!
Then, all there's left to do is plate and enjoy!
